The muffins in which I pushed the banana to the middle turned out way, way better. I pulled out my first batch for thawing yesterday and ooooooh they are heavenly. Moist and with a deliciously sweet and creamy center. The chocolate chips definitely did not hurt, and I’m glad that instead of just mixing them into the batter, I dropped a few into the center of the muffin with the chunk of banana – I don’t like chocolate covered bananas in the least, but somehow, in the context of the muffin, it works. Ooh, mama does it work.

Hello, world!
Welcome to my blog. The “Picky” bit is 110% true. I have issues out the wazoo with texture; any vegetable other than peas, corn (ha ha) or carrots terrifies me; and anything beyond mild spiciness sends me screaming for a glass of milk (or if I’m really really lucky, the necessary). The “Gourmet” bit is a joke based on the fact that I grew up with a grandmother that loved to cook but passed away before I was smart enough to grab all the knowledge that amazingly awesome woman kept in her noggin, and a mother who was never taught to cook and, sadly, passed it on to us. She is also awesome, but not so much in the kitchen. She doesn’t use any flavor at all, and cooks meat to death so we don’t all die horribly from the poisons lurking within partially cooked meat. Problem being we sometimes nearly die from choking to death on chicken the texture of sand.
I kid because I love, honest.
But anyway, I’ve been bitten by the cooking bug for years – I just always had this little issue with “I don’t like 50% of what’s in that recipe, and I don’t know how to adjust it to fit me.” Well, these days, the internet is just chock full of cooking journals which really means ‘like we need another’, so it’s a lot easier for ignoramuses such as myself to google around and figure something out – and hey, half the time these days, it’s even edible!
